Chef Ryan Carroll lives on a working mushroom farm in the heart of the North Fork, surrounded by a community of small farms, family-run wineries, and independent commercial fishermen.
Each day starts at the farm and leads to the fields, docks, and greenhouses of trusted partners—sourcing the freshest possible ingredients for that night’s dinner party. Whether it’s heirloom tomatoes picked still warm off the vine or oysters pulled straight from the Peconic Bay, every ingredient has a story—and every menu reflects the land, the season, and the people gathered around the table.
